This isn’t the first time I’ve talked about recycling your food. But I’m particularly pleased with tonight’s recycling effort because it took leftovers that really didn’t go over very well and turned them into a meal that got gobbled up and seconds were even asked for!
Sadly, I didn’t take a pic as it came out of the oven and now there’s nothing to take a picture of. Live and learn~
Two nights ago I took 1/2 a Costco sized bag of fresh spinach and sauted it with onions, garlic and freshly diced tomatoes. It didn’t go over the way I’d hoped. So I let it sit in the fridge for 2 days and then I cooked up 1 lb. of ground beef, with 2 crushed cloves of garlic. Then I mixed the spinach into the pan, heating throughout. In the meantime, I boiled pasta. After the pasta was drained, I poured the ground beef/spinach mixture into the pot and mixted it all together. Then I took the whole thing, poured it into a 9×13 Pyrex, grated some mozzerella onto it (I would have preferred parmesan, but was out) and baked it for 20 minutes.
